About 8one8 Brewing
8one8 Brewing is a family-owned and operated brewery located in Canoga Park, California. Founded in 2014, we began as homebrewers and converted our passion into a business on a 3BBL brewhouse.
With limited self-distribution and the addition of our tasting room in 2018, we’ve grown into a 10BBL brewhouse, commissioned our own canning line, implemented a water treatment and lagering program, and expanded our production capacity to 200+ BBLs of tank space.
We’re currently looking for the next member of our production team—a motivated, hardworking, team-oriented individual who wants to grow with us and build a long-term career in brewing.

Position Summary
This position is responsible for assisting in all aspects of beer production at 8one8 Brewing, including preparation, fermentation, cellaring, packaging, and general brewery operations. You’ll play a key role in maintaining beer quality, cleanliness, safety, and efficiency throughout the production process.
Key Responsibilities
Responsibilities include, but are not limited to:
Cellar & Packaging Operations
Keg washing and filling
Can and bottle packaging
Finished beer filtration and tank-to-tank transfers
Understanding pump functions and balance lines
Carbonating beer to proper specifications
Monitoring fermentation and conditioning processes
Cleaning & Sanitation
CIP, sanitation, and passivation of fermentation, conditioning, and brewing vessels
Safe handling of standard brewery caustics and acids using company-specified PPE
Cleaning and maintaining cellar space, tank exteriors, parts, drains, racks, floors, and equipment
Quality & Brewing Support
Dissolved oxygen testing and carbonation testing
Water mineral testing
Maintaining water tank levels and temperature
Performing cell counts and proper yeast handling
Warehouse & Inventory
Warehousing and receiving malt, hops, and other raw materials
Logging and managing inventory (grain, yeast, hops, kegs, packaged goods, etc.)
Safe operation of walk-behind and ride-on motorized forklifts
General Operations
Basic brewhouse mechanical and plumbing operation
Assisting with various production-related tasks
Maintaining a safe, clean, and organized work environment at all times
Qualifications
Required
Must be 21 years of age or older
Minimum of 1 year professional brewing or cellaring experience
Comfortable with chemical handling and proper PPE usage
Forklift experience or comfort operating motorized equipment
Ability to lift and carry 55 lbs repeatedly throughout the day
Able to work on feet for extended periods
Reliable with a consistent attendance record from previous employers
Applications without prior professional brewery experience will not be considered.
Preferred
Mechanical aptitude and general maintenance skills
QA experience (DO testing, carbonation testing, cell counts)
Packaging line familiarity (cans and/or bottles)
Computer proficiency (Word, Excel)

This is not a “learn to brew” position. It’s a professional working production role. If your experience stops at loving beer and homebrewing, we’re probably not the right fit right now. At least one year of professional brewery or cellar experience is required.
Manager – Osborne Pizza Kitchen (OPK)
The manager is responsible for managing the daily operations at Osborne Pizza Kitchen (OPK). This is a hands-on, working Kitchen Manager role who leads from the line while also helping guide systems, people, and performance.
This role works closely with both FOH and BOH teams to deliver OPK’s signature product and guest experience. The manager is accountable for the quality, consistency, and execution of the full menu while maintaining a clean, organized, and high-performing kitchen.
At OPK, the manager is expected to be present — on the line, in service, and visible to both the team and guests.
Essential Job Functions
Leadership & Culture
Lead by example as a working Manager, spending the majority of time on the line (stretching dough, baking, expo) while also managing people and systems
Provide leadership by setting clear expectations, holding the team accountable, and maintaining high standards
Deliver weekly staff meetings to recognize achievement, address opportunities for improvement, and communicate priorities
Foster a positive and collaborative kitchen culture
Perform table touches and remain engaged with the guest experience.
Product & Execution
Deliver the highest level of execution for guest experience, product quality, and hospitality
Maintain OPK’s quality-first approach — speed matters, but quality always comes first
Prepare food in a fully open kitchen where execution and cleanliness are always visible to guests
Make dough in-house and oversee hand-stretched pizza production
Maintain and develop recipes and production standards while allowing room for creativity and growth
Ensure consistency across all menu items while helping take the restaurant to the next level
Operations
Lead daily kitchen operations to ensure optimal performance
Maintain the facility and equipment to the highest standards in accordance with state and local health codes
Manage food and operating supply purchasing
Manage inventory levels, food handling, rotation, and waste control
Maintain a clean, safe, and organized kitchen environment
Team Development & Staffing
Hire and maintain appropriate kitchen staffing levels to meet business needs and financial goals
Train and develop team members across roles
Deliver coaching, counseling, and performance reviews
Build a well-rounded team capable of growth and internal promotion
Financial & Administrative
Drive financial performance through controllable food and labor costs
Conduct inventory counts and reporting in collaboration with ownership and accounting
Review monthly reports to gain insight into operational performance
Support ownership with payroll and timekeeping to ensure accurate and timely submission
Ownership Collaboration
Work closely with ownership in a collaborative, execution-focused relationship
Ownership is actively involved behind the scenes, providing marketing, accounting, and operational support
This role is expected to communicate openly, collaborate effectively, and provide feedback
Working Conditions & Expectations
This role requires weekends, holidays, early mornings, and late evenings
Shifts range from 8–12 hours
Fast-paced, high-energy environment
This position is not a fit for someone who wants to sit in an office analyzing reports
This position is also not for someone who only wants to work BOH — it is a fully rounded role combining leadership, execution, reporting, and guest interaction

Qualifications
Hospitality, culinary degree or related field or at least 3 years of Kitchen Management experience
Experience training, developing, and leading teams of 8–18 employees
Ordering, receiving, and inventory control experience preferred
Strong communication skills and team-player mindset
High level of accountability
Excellent basic math skills and ability to operate a POS system
Physical Requirements
Ability to work in a standing position for long periods (up to 10 hours)
Ability to reach, bend, stoop, and frequently lift up to 50 pounds

Ensure that food is cooked and presented in an appealing and appetizing manner.
Collaborate with the kitchen staff to ensure timely and efficient service.
Maintain a clean and organized work area, following all sanitation guidelines.
Assist in developing and refining menu items, as requested.
Monitor food inventory levels and communicate any shortages to the Manager.
Requirements:
Previous experience as a Line Cook or in a similar role within a casual dining environment.
Ability to work in a fast-paced and high-volume kitchen.
Knowledge of various cooking techniques, food safety, and sanitation regulations.

Ability to work well within a team and communicate effectively.
